Fleur de Sel Caramel Ice Cream



Indulge in the rich and creamy delight of Fleur de Sel Caramel Ice Cream. The subtle hint of salt enhances the sweetness of caramel, creating a perfectly balanced treat that will tantalize your taste buds.

Ingredients:

  • 1 cup sugar
  • 2 tablespoons water
  • 2 cups heavy cream
  • 1 cup whole milk
  • 6 large egg yolks
  • 1 teaspoon fleur de sel or sea salt

Instructions:

In a saucepan, combine sugar and water over medium heat, stirring until sugar dissolves

Once sugar is dissolved, increase heat to high and boil without stirring until mixture turns amber in color, about 6-8 minutes

Remove from heat and slowly whisk in 1 cup heavy cream until smooth

Be cautious as mixture may bubble up

Whisk in remaining cream, milk, and fleur de sel

Return mixture to medium heat, stirring occasionally until steaming

In a separate bowl, whisk egg yolks

Gradually whisk in about 1 cup of hot cream mixture to temper yolks

Pour tempered yolks back into saucepan and cook over medium heat, stirring constantly, until mixture thickens enough to coat the back of a spoon

Strain custard through a fine-mesh sieve into a bowl set in an ice bath

Cool completely, then cover and refrigerate until well-chilled, preferably overnight

Churn custard in an ice cream maker according to manufacturer's instructions

Transfer churned ice cream to an airtight container and freeze until firm, typically about 4 hours or overnight
