Roasted Mahi Mahi with Green Beans and Cherry Tomatoes



Mahi Mahi, green beans, and cherry tomatoes are all roasted to perfection with garlic and lemon in this dish. The flavors go so well together.

Ingredients:

  • 4 Mahi Mahi fillets
  • 1 pound green beans, trimmed
  • 1 pint cherry tomatoes
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • Salt and pepper to taste

Instructions:

Preheat the oven to 400F 200C

Place the Mahi Mahi fillets on a baking sheet lined with parchment paper

Arrange the green beans and cherry tomatoes around the fish on the baking sheet

Drizzle olive oil over the fish, green beans, and cherry tomatoes

Sprinkle minced garlic over the top

Season everything with salt and pepper to taste

Place lemon slices on top of the fish

Roast in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork

Serve the roasted Mahi Mahi with green beans and cherry tomatoes hot
