Almond Cupcakes with Cream Cheese Frosting
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon almond extract
- 1 cup sour cream
- For Cream Cheese Frosting:
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- A pinch of salt
Instructions:
Warm up your oven to 350F 175C and put cupcake liners in a muffin tin
In a bowl, mix the all-purpose flour, almond flour, baking powder, baking soda, and salt together with a whisk
Melt the butter and mix it with the sugar in a different bowl until it is light and fluffy
Slowly add the eggs one by one while beating
After each egg, add the almond extract
Slowly add the dry ingredients and then the sour cream one at a time until the batter is smooth
Fill up each cupcake liner about two thirds of the way to the top with batter
Put it in the oven and bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
For a few minutes, let the cupcakes cool in the muffin tin
Then, move them to a wire rack to cool completely
Melt the cream cheese and butter together
Then, beat them together until the frosting is smooth and creamy
Put in the almond extract, vanilla extract, and powdered sugar
Also, add a pinch of salt
Beat until everything is well mixed and fluffy
Once the cupcakes are cool enough to handle, use a knife or a piping bag to frost them with the cream cheese frosting
