Keto Sugar Free Lemon Tart

Ingredients:

  • 2 cups almond flour
  • 1/3 cup powdered erythritol
  • 1/4 cup coconut oil, melted
  • 3 large eggs
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup powdered erythritol for the filling

Instructions:

Preheat the oven to 350F 175C

In a bowl, combine almond flour, 1/3 cup powdered erythritol, and melted coconut oil

Mix until a dough forms

Press the dough into a tart pan, covering the bottom and sides evenly

Prick the base with a fork and bake for 10-12 minutes until lightly golden

Remove from oven and let it cool

In another bowl, whisk together eggs, lemon juice, lemon zest, and 1/4 cup powdered erythritol until well combined

Pour the lemon mixture over the cooled crust

Bake for another 15-20 minutes until the filling is set

Let the tart cool completely before slicing

Refrigerate before serving
